Blueberry Chia Seed Jam

Thereโ€™s no better way to enjoy fresh baked goods than to have a picnic in nature with homemade jam or in my case, in my tiny backyard while I fight off squirrels ๐Ÿฟ

Either way, this delightful blueberry jam is so easy to make and doesnโ€™t contain refined sugar. I also added chia seeds to not only act as a binding agent, but to add in extra fiber, protein and omega-3 fats! Ta -dah!

This refined-sugar free, paleo and vegan friendly jam is super easy to make and adds extra protein and fiber!

Instructions

  1. Add blueberries into a saucepan and turn heat to medium/low. Mash the berries with a fork. Once you have mashed the berries add chia seeds, honey and lemon zest! Allow the mixture to boil for 10 - 15 seconds, then remove from the heat. Transfer into a glass jar and allow it to cool.
