Sliced avocado, almond flour crust and spices a plenty! Need I say more? These avocado fries are not only incredibly tasty, but are healthy and easy to make!

If there is one thing in this world I can say with confidence it’s that fries make everything better. Especially when they are made with clean, high quality ingredients. These fries are the perfect blend of crispy on the outside and buttery soft on the inside! Dip them into your favorite healthy sauce ( I Iike Primal Kitchen Ketchup or Primal Kitchen Ranch) or enjoy them plain! There’s no wrong way to eat fries!

Why Avocados?

Avocados are a powerhouse of healthy vitamins and minerals. In particular, avocados are very high in potassium…even higher than a banana! They are also a healthy fat.The majority of the fat in avocado is oleic acid — a monounsaturated fatty acid that is also the major component of olive oil.

Oleic acid has been associated with reduced inflammation and shown to have beneficial effects on genes linked to cancer.

Try this fun twist on French fries using avocado's and almond flour!

  1. Preheat the oven to 425F, and line a baking sheet with foil. Slice the avocados in half and carefully remove the pit. Cut each half into three or four slices and set them aside.
  2. You'll need two small bowls for the dipping stations. In the first, combine the almond flour, salt, pepper, and paprika.
  3. In the second bowl, combine the beaten egg, water, and mustard.
  4. Dip the avocado slices into the eggs, then the almond flour. Lay them on the baking sheet. When they're all dipped, bake the avocado fries for 10 to 12 minutes, then flip and bake another 2 to 4 minutes.
